Food Preservation: A Matanzas women´s priority

In keeping with the time of constraints and shortages, food preservation is a priority task that aim farmers at the Ramon Milian Rodriguez Cooperative of Credit and Service , in the municipality of Perico, located in the western province of Matanzas.

Lucila Nunez  Mesa explained experiences about her  insertion into the local development project of the Indio Hatuey Experimental Station of Pastures and Forages Indio Hatuey (EIH), learning in several workshops for food preservation and socialization of knowledge among farmers of other states and municipalities of the province.

With passion he showed how naturally and then dehydrate the peppers sun, chives, cilantro, parsley and other products, does dry to add to various dishes species, raising interest in other females, who by the Cuban Women’s Federation  (FMC) seek to learn the methods.

Proud Lucila shared the result of the work and won the prize in the relevant forum for science and technology based on cooperative and revealed that thanks to the patient work of Maybe Campos, coordinator of the station, there are already many young women and incorporated into project, which I also see as a way to raise revenues.

As Cuba is a country where fruit trees grow and are harvested each year high numbers of plant to achieve its conservation and prevent spikes in harvest spoilage, alternatives are sought as pickles, dehydration or fermentation. It’s another of the edges exploiting farmers to preserve food.

Eduardo Landin, Lucila husband and favored with Decree Law 300 (delivery of land in usufruct), create helpful task makes her partner, and although not yet market the products and plan to create in the El Campero farm a mini industry source employment for other women.

Meanwhile, Lucila shared with farmers in the municipalities of Perico, Colon and Los Arabos their experiences in the preservation of food and some recipes for chili pulp, canned sauce, leafhoppers cassava, rice mayonnaise, corn cake and many other .
